Courgette, white bean & ricotta salad
This is a super simple salad that reminds me of summer. Great as a side for a bbq or part of a picnic spread.
Ingredients:
2 large courgettes (shaved into ribbons with a vegetable peeler or mandolin)
1 tin butter beans (or other white beans) drained and rinsed
1 lemon (zest and juice)
1 tsp dijon mustard
1 clove garlic minced
Olive oil
Pinch chilli flakes
1/2 tub of ricotta
Salt and pepper
Handful of dill or parsley
Method:
Shave the courgette into ribbons, add to a bowl with the drained beans and dill.
Make a vinaigrette with the mustard, garlic, lemon juice, olive oil, chilli flakes, salt & pepper to taste. Mix this in with the courgette and beans.
Next prepare the ricotta, mix with a couple of tsp of olive oil, the lemon zest, salt & pepper to taste. & add to the middle of the salad.
Top with more dill, flakey salt & a drizzle of olive oil.
