Yogurt Bowl
This is a great breakfast, full of healthy fats, protein and fibre.
Live unsweetened yogurt such as Fage or unflavoured kefir is a great probiotic for your gut. Defrosted frozen summer berries are full of polyphenols (anti-inflammatory compounds) and fibre. Nuts, seeds, and milled flax are great prebiotic fibre for your gut and a great filling source of protein and healthy fat.
If you don’t want to make the granola, just serve with a handful of mixed nuts and seeds, a tablespoon of chia seeds and a tablespoon of milled flaxseed.
Live Yogurt or Kefir
Live yogurt such as Fage.
Most big supermarkets sell kefir now, brands such as Biotiful. This contains even more probiotic bacteria than yogurt. Opt for unsweetened unflavoured.
Stewed Berries
200g frozen mixed berries / summer fruits (black berries, strawberries, blueberries, currants, raspberries)
Optional 1 tbsp erythritol, cinnamon, vanilla.
Mix ingredients and leave to defrost in the fridge overnight or leave at room temperature for a few hours or cook over a low heat until defrosted.
Keeps in a sealed container in the fridge for a couple of weeks.
Low Carb Granola
Ingredients:
250g nuts (walnuts, hazelnuts, almonds, Brazil, pecan)
100g seeds (pumpkin, flax, sesame, sunflower)
2 tbsp flaked coconut (optional)
2 tbsp ground flaxseed
2 tbsp chia seed
2 tsp cinnamon or mixed spice
Pinch salt
2 tsp oil (olive oil or coconut oil)
1 egg (optional, could replace with an extra tbsp of chia seed or flaxseed)
2 tbsp honey (or maple syrup, erythritol or inulin (found online or health food stores)
2 tbsp almond butter
1 tsp vanilla
Add all ingredients and mix thoroughly.
Spread out on a lined baking sheet and roast at 180’C for 20 minutes turning it once or twice during baking so it’s evenly toasted.
Allow to cool, it will harden as it cools.
Store in an airtight jar.
