Frozen Vegetable Dahl

This is a super cheap, quick weeknight meal with over 12 plant points meaning your well on the way to meeting your goal of 30 in a week.

Frozen veg is a great thing to have in the freezer, it's often higher in nutrients as it's frozen straight after harvesting and so nutrients are preserved.

Ingredients:

1 tbsp coconut oil or olive oil

1 red onion finely diced

Pinch salt & peper

3 cloves garlic finely chopped

1 thumb sized piece of ginger finely chopped or grated

2 tbsp curry powder

300g red lentils

1 x 400ml tin coconut milk

300ml stock

100g frozen mixed vegetables (I like the carrot, green bean, cauliflower mix)

2 pieces frozen spinach or a large handful of fresh

2 limes zest and juice of one and 1 to serve

Method:

In a large pan over a medium heat add the oil, onion and salt. Cook until soft, about 5 minutes

Mix in the garlic, ginger and curry powder and cook for a minute.

Mix in the red lentils, coconut milk and stock and cook for 30 minutes stirring occasionally until the lentils are almost cooked.

Stir through the frozen mixed veg, spinach and lime zest and juice and cook until everything is soft and up to temperature.

Taste and adjust seasoning.

Egg fried in olive oil, curry leaves, coriander seeds, cumin seeds, nigella seeds, salt, pepper, turmeric
