Stewed Berries
I'm a huge fan of frozen mixed berries. High in anti-inflammatory polyphenols (that give them those rich deep colours) and a great low sugar source of fibre to include at breakfast.
Great with chia pudding or yogurt, with the nut granola for breakfast or a snack.
Ingredients:
200g frozen mixed berries / summer fruits (black berries, strawberries, blueberries, currants, raspberries)
Optional 1 tbsp erythritol or 1 tsp honey, cinnamon, vanilla.
Method:
Mix ingredients and leave to defrost in the fridge overnight, or cook over a low heat until defrosted.
Keep in a sealed container in the fridge for a couple of weeks.
